Produced by the northernmost mainland Scottish distillery, Wolfburn Distillery (Thurso, Caithness), this 12-year-old single malt marks a major step in the distillerys evolution their first flagship age-statement whisky in the core range. Matured for twelve years in the companys warehouses, this expression uses a deliberate and balanced cask-regime to create both depth and balance: equal parts second-fill Oloroso sherry butts and ex-bourbon casks.
It is non-chill filtered, natural colour, and bottled at 46% ABV underscoring the distillerys commitment to quality in a young but maturing whisky house. Tasting Notes Colour: Bright gold with some deeper amber highlights from the sherry-cask influence. Nose: Invites with honeyed malt sweetness, candied sugar, and floral hints, layered with a subtle wisp of peat smoke and maritime freshness.
Sherry-derived nutty tones and gentle oak spice emerge with time. Palate: Smooth and refined, the palate offers rich malt, light caramel and burnt sugar, gentle spices and a continued thread of sweet-fruited sherry character. Vanilla and honey combine with soft dried-fruit tones (fig, raisin) and a touch of gentle pepper.
Finish: Long and lingering, with dried fruit and caramel echoing, supported by a gentle warmth and a balanced dryness from the oak. The maritime atmosphere of the distillery lingers as a subtle coastal freshness.
