Tasting Notes:
In the glass, this wine showcases a vivid ruby hue with subtle brick-red accents along the rim of the glass. The nose reveals aromas of ripe dark berries complemented by layers of cedar, dried Italian herbs and tobacco. The palate reinforces the well-structured tannins and juicy fruit profile.
The finish is fresh and lingers gracefully on the palate, making it a perfect Bordeaux blend that exhibits remarkable depth and finesse. Food Pairings:
Arista di Maiale al Forno (Roasted Pork Loin with Sage and Rosemary) pairs well with the Classique. A traditional Tuscan dish consisting of pork loin roasted with fresh sage, garlic and rosemary paired with a white wine gravy.
The bold structure of the Classique harmonises with the savoury richness of the pork, while the herbaceous undertones of the wine and the dish mirror each other. If you ever visit The High Road Boutique Wine Cellar in Stellenbosch, you will find a restaurant that will cater to the pairing above called Pane e Vino.
Vinification:
This Bordeaux blend is made from four different cultivars, Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. The grapes arrived at the cellar for processing. Normal procedures such as sorting, yeast addition and fermentation took place. Each cultivar was matured separately for up to 10 months in French oak barriques.
The final stage involves experimental blending to create the perfect composition for the Classique. What's in the box
