The nose presents a complexity of interwoven layers, such as cedar spice and cigar box, which match beautifully with the palate that emulates a dark chocolate characteristic, coupled with fresh plum. The mouthfeel is balanced and refined. Food Pairings:

The high proportion of Cabernet Sauvignon in the wine offers a profound backbone throughout the meal.

Vineyards and harvest:
The vineyards are located in the heart of the Golden Triangle on the Helderberg side of Stellenbosch, with high-potential soils and optimal fruit ripening. This region has a significant cooling effect from the ocean breeze, which allows for the grapes to ripen evenly and slowly. "Koffieklip" soil that contains a clay sub-soil, combines with plant material that maintains the virus-free status, allowing the wine to show valuable fruit expression and pure quality.

Vinification:
The hand-picking begins when the grapes have reached optimal ripeness, The grapes are processed with a significant focus on the post-fermentation skin contact. This is to ensure the ageing potential of the wine and to improve the wine's colour stability, tannins and the overall flavour profile.

The Cabernet Sauvignon received pumpovers in stainless steel tanks while the Malbec and Petit Verdot received punchdowns in open top containers. The wine is aged in French oak barriques for almost 2 years. Barriques are comparable reasonably tall (compared to larger format barrels) and are made of thinner staves (compared to American Barrels).

This provides increased oxygen transfer rate, enhanced surface area-to-volume ratio, better lees contact and more controlled evaporation and concetration. Vintage subject to the latest available vintage from the winery.What's in the box
